広島の酒といえば、白牡丹が有名ですよね。白牡丹は、広島県東広島市西条町にある酒造会社で、1675年（延宝三年）に創業した歴史ある日本酒です。広島酒の中で最も古い歴史を持ち、三百年の伝統を守りながらも新しい発想で酒づくりに取り組んでいます。

Hakubotan is one of the most famous sake breweries in Hiroshima. Hakubotan is a sake brewery located in Saijo Town, Higashi-Hiroshima City, Hiroshima Prefecture, and was founded in 1675 (Enpo 3). It is the oldest sake brewery in Hiroshima, and while maintaining its 300-year tradition, it is also working on sake brewing with new ideas.

白牡丹の特徴は、甘口で旨味が豊かな味わいで、冷やしても燗してもおいしく飲めることです。麹から生まれるふくらみのある旨味と酵母の醸し出したさらりとした味わいが絶妙なバランスを作り出しています。飲み飽きしないお酒なので、どんな料理にも合わせやすく、季節や気分に合わせて楽しめます。

私は、白牡丹の中でも特に凍結生酒が好きです。凍結生酒とは、蔵人しか飲めなかったお酒を氷らせたもので、冷凍保存することで新鮮な味わいを保っています。解凍するときには自然解凍することで、最初に出てくる上澄み液が最高に美味しいです。甘くてフルーティーな香りと味わいが口いっぱいに広がります。

I especially like the frozen nama-zake from Hakubotan. Frozen nama-zake is sake that was only available to brewers and is kept frozen to preserve its fresh taste. When thawing, it is allowed to thaw naturally, and the first supernatant liquid that comes out is the best. The sweet, fruity aroma and flavor will fill your mouth.
