石鎚真精大吟醸　無濾過原酒　袋吊り雫酒Ishizuchi Shinsei Daiginjo Unfiltered Unrefined Harajuku Shizukusyu

こんにちは。日本酒ブロガーのメカ丸です。今回は、愛媛県西条市にある石鎚酒造が造る日本酒「石鎚」の「真精大吟醸　無濾過原酒　袋吊り雫酒」をご紹介します。

Hello. I am Mekamaru, a sake blogger. This time, I would like to introduce “Shinsei Daiginjo Unfiltered Harajuku Shizukushu” from Ishizuchi, a Japanese sake brewed by Ishizuchi Shuzo in Saijo City, Ehime Prefecture.

このお酒は、石鎚酒造の全技術を注ぎ込んだ最高峰の逸品です。原料米には、兵庫県口吉川産の特上山田錦を使用し、35%まで磨きます。仕込み作業では、蔵元の越智兄弟が全量手洗いし、麹造りでは製麹時間の限界に挑戦しています。発酵中のもろみは、毎日朝夕温度を確認し、コンマ1度の単位で管理します。最後のしぼりでは、無加圧の袋吊りで雫だけを取り集めて瓶詰めし、火入れを行った後、1年間貯蔵熟成させています。

This sake is the pinnacle of all Ishizuchi Shuzo’s technologies. The rice used is special top-grade Yamadanishiki produced in Kuchiyoshikawa, Hyogo Prefecture, and polished to 35%. During the brewing process, the Ochi brothers wash all the rice by hand, and during koji making, they push the limits of koji making time. During fermentation, the temperature of the mash is checked every morning and evening and controlled to the nearest tenth of a degree. After the final pressing, only the drops are collected and bottled in unpressurized bags, and then the bottles are fire-quenched and aged in storage for one year.12

このお酒は、「SAKE COMPETITION 2018」にて吟醸部門金賞を受賞した実力派です。香りは清々しく爽快で、口当たりはとても滑らかです。優しい甘みとすっきりしたキレがあり、穏やかながら深みのあるコクや酸味が感じられます。まさに手仕事の極みと呼ぶに相応しい味わいです。

This sake is a talented winner of the Gold Prize in the Ginjo category at the SAKE COMPETITION 2018.12 The aroma is fresh and invigorating, and the mouthfeel is very smooth. It has a gentle sweetness and a clean crispness, with a gentle yet deep richness and acidity. The taste is truly worthy of being called the ultimate in handcraftsmanship.
