The ancient Chinese philosopher Lao Tzu said, “The ideal way of living is to be flexible and flow naturally like water. In honor of this phrase, Shirotaki Shuzo launched the sake “Kozen Josui” in 1990. The sake is made from the pure melted snow water of Echigo-Yuzawa, and its soft water makes it soft on the palate and gives it a fruity, unctuous taste.
